Lemon Pound Cake {GF and Sugar Free}

With everyone clinging to comfort foods during shut down I thought you might like a delish-ious dessert that won’t pack on the pounds!

This Is another one of my go-to faves that everyone loves.


prep time 15 minutes

cook time 35 minutes

yield 1 ten inch cake


ingredients

  • 1/2 cup melted unsalted butter plus a little to grease the pan

  • 6 large eggs

  • 2 tablespoons grated lemon peel

  • 1/2 cup Swerve

  • 2 tablespoons lemon juice

  • 2 cups finely ground almond flour

  • 2 tablespoons coconut flour

  • 2 teaspoons baking soda


preparation

  • preheat oven to 350F and grease a Bundt pan with butter

  • crack eggs and whisk in mixing bowl and incorporate Swerve

  • in a separate bowl blend almond flour, coconut flour and baking soda

  • blend wet ingredients into dry ingredients

  • pour into prepared cake pan

  • place on middle rack of oven and bake for 35 minutes

you may dust with a powdered sugar like Swerve of powdered monk fruit sweetener or serve as is.
